Happy holidays everyone! I have always loved Christmas time and within the past couple of years I have began to bake my own goodies. I always used to rely on friends and family (specifically my aunt who is the best baker on the planet) to make the really good, not so healthy cookies, while I attempted to make healthier versions of them.
Lets be honest, nothing beats the real deal when it comes to Christmas and holiday cookies and treats. Nothing. And if I could eat anything for the rest of time, cookies-wise, I would choose these Peanut Butter Blossoms. Classic and aaaamazing. The texture of peanut butter blossoms is what gets me the most. It’s soft, yet crumbly. Peanut buttery, yet sweet and subtle with that nice kick of chocolate from the Hershey’s Kiss center. And it’s rolled in sugar. There’s just nothing wrong with this cookie.
Now I searched for a recipe for these cookies without shortening, because for whatever reason (health being first) I refuse to ever buy or use shortening. I mean c’mon, I am already going way out of bounds from what I normally cook and way away from what I normally splurge on. But you know what, it’s the holidays, I work my bootie off all year, and we all deserve to live a little right? I also do my body a favor and kick up my workouts this season, that way my splurges won’t weigh me down too much!
I found this classic recipe on Tide & Thyme – and while this same recipe may be found many places, this is where I got it and they were perfect. Head on over there to get the recipe (I used fat-free milk and about 3 tbsp. extra sugar for rolling) & below I have done you guys a favor and taken the guess work out of how “bad” this cookies really are in the nutritional department. It’s not that bad! Only 98 calories each! Just try to limit yourself to only a couple!
