People. I have discovered a new favorite cookie. Honestly, I never liked gingersnaps or gingerbread cookies, but these are SO good. The texture is perfectly chewy — almost brownie like. And the flavor is exceptional. Plus the butterscotch chips add this amazing element of awesomeness.I made these for my boyfriend’s family Christmas and the entire batch was gone in 2 days!

The thing that I love best about this cookie is their versatility. Butterscotch is definitely my favorite, but I put Hershey Kisses on some, left some plain, and also used dark chocolate chips and white chocolate chips. All GREAT!
