Chicken Caesar Pita


So I used to work at Chili’s back in high school and jr. college and I had a weakness for their Chicken Caesar Pita. It was an item I would only get on a special occasion because it was like 600 calories and it came with fries. But it was soo good. The warm pita bread, the creamy Caesar dressing. Mmmm. Too bad they don’t have it anymore. Or maybe that’s a good thing since it wasn’t the greatest choice. Much better than those nachos I used to get…. Yum. Oh Chili’s I sort of miss you now.

Lucky for you (and me!) I re-created the dish and cut the calories and fat by more than half! This is a super-simple recipe you can make for dinner or even pack for lunch. Just pack your salad with the dressing on the side in a separate container from your pita and assemble when ready to eat to avoid sogginess.

Easy, fast, and healthy! Oh and tasty! You can’t ask for much more in a meal.





Chicken Caesar Pita

serves 1

per serving: 260 calories, 6g fat, 681mg sodium, 33.5g carbs, 8g fiber, 2.5g sugars, 24g protein


2 oz. cooked skinless chicken breast, chopped

2 cups shredded romaine lettuce

1 tbsp. light Caesar dressing

1 pita bread, preferably high fiber and whole grain with about 130 calories

1 tsp. reduced-fat grated Parmesan cheese


In a large bowl, toss together chicken, romaine, and Caesar dressing.

Warm pita bread in the microwave for 25 seconds, until warm.

Pile lettuce mixture onto pita and sprinkle with Parmesan. Fold and eat!
