Woooooo!! Happy 1st birthday to Callie Cooks (Sept 18)! I really have a hard time believing it’s already been 1 year since my very first post: Funfetti Donuts. That very first post actually made appearances on Gourmet Live and Babble. Pretty exciting! In addition, my Carrot Cake Donuts made the cut on a Buzz Feed post!!! Super exciting! I am so honored that my recipes have been linked to by those just mentioned and also other blogs.
Also exciting? I broke the over 3,000 visits per month this week too! That was a nice b-day gift.
I have to say I am super proud of how far CC has come, and am so excited to see where it will go as I really have been trying to put more work and effort into it lately. I dream of having my own cookbook someday.
As you may know, I do largely contribute to recipe development at Hungry Girl. I am also the website food stylist and photographer. Obviously my professional life has helped me prepare for how I want to brand Callie Cooks. I fully understand the type of recipes I want to create and the way I want my photos to look. This year I have learned so much about food styling and photography, and I have to say I am happy with the direction my photos have taken. I can’t say I love some my older photos here, and honestly, even some of my new ones. I tend to rush my way through photographing my blog’s recipes because it’s what I do all day, and truly I am sometimes soo over it. Also, it doesn’t help that my apartment can be dark and lack in the natural light department once I get home from work. I have now learned when is a good time to shoot and how to use my lights and camera in order to capture a good photo. Having this blog has been a really enlightening learning process.
I look forward to future posts as CC grows. I want to expand from just recipes, to weekly recipe planning, diet plans, fitness tips and workouts. I also dream to be a lifestyle coach, in which I can help others develop a healthy lifestyle as I once did. More on that to come!
For now, let’s celebrate one year of recipes from Callie Cooks with these awesome protein-loaded funfetti pancakes. Really, what is better than sprinkles for breakfast?! Now add a hefty dose of protein and fluffy pancakes. Yummm! These took a few tries. The first round they literally turned out like thin rubber crepes… Gross! But after a little tinkering I am happy with them!
Cooking with protein powder isn’t really easy, but having a good amount of baking powder to help give the pancakes a fluffy texture, and beating your egg whites, really helps. They are fluffy, but dense and filling. They taste awesome with some sugar-free syrup or even some whipped cream! Best of all, you get three large pancakes for 260 calories and 24g (!!!) of protein!

Fit N Funfetti Protein Pancakes
257 calories, 7.5g fat, 684mg sodium, 35g carbs, 3g fiber, 8g sugars, 24g protein
1/2 scoop vanilla protein powder with about 100 calories per scoop(I like Designer Whey French Vanilla)
1/4 cup white whole wheat flour
1 tsp. baking powder
3 packets no-calorie sweetener (I like Truvia!)
3 egg whites
1/8 tsp. vanilla extract
1 drop almond extract, if desired (I recommend!)
2 tsp. rainbow sprinkles
In a medium bowl, combine protein powder, flour, baking powder, and sweetener.
In another bowl, beat egg whites with extracts until fluffy, about 1 minute.
Using a fork, whisk egg whites into flour mixture until fully combined. Stir in sprinkles.
Bring a skillet sprayed with nonstick spray to medium heat. Add 1/3 of batter to form a large pancake about 4 – 5 inches wide. Cook until bubbly on top and lightly browned, about 1 – 2 minutes. Carefully flip and cook until cooked through and lightly browned, about 1 – 2 minutes.
Repeat with remaining batter to make 2 more pancakes.
Top with your choice of toppings and eat up!
